Roasted Banana & Fig/Cointreu/Créme Fraiche/Queso Fresco
Choosing your bananas
Bananas do not need to be ripe for this recipe, but you should avoid bananas that are so under ripe that they have a large green part where the stem is. Smaller bananas work better (organic bananas are generally smaller).
Roasted Banana & Fig/Cointreau/Créme Fraiche/Queso Fresco
(recipe is for a single banana, multiply by however people you are serving)
INGREDIENTS
1 banana
one sheet of aluminum foil, about 6” x 10”
1/8 tsp of Cointreau (optional)
a pinch of cinnamon
1 Tbsp of Creme Fraiche
1 Tbsp Queso Fresco
DIRECTIONS
Preheat oven to 350°. Slit banana starting about an inch from each end, with the curve facing you. Wrap in foil so it it almost completely covered, leaving just the slit showing. Add Cointreau (if using) into the slit and sprinkle with cinnamon. Close the foil completely. Place on a baking sheet and bake for 35-40 minutes. In the meanwhile, heat a small sautée pan and add butter. Cut your fig in half and sauté over a medium flame for 2-3 minutes until it is just caramelized. Remove banana from the oven and remove the foil. Place the banana on the place you are going to use for serving. Drizzle with Creme Fraiche and sprinkle with Queso Fresco. Place the half fig in the center.
