The Mediterranean meets Mexico in this unusual dish. (Recipe serves 4)


2 Japanese eggplants (select wider one)

2 oz. olive oil

Poblano chile

2 oz. Golden raisins

2 oz. slivered almonds

1/4 cup Crema Mexicana (or sour cream)

1/4 cup goat cheese

3 oz blanched walnuts

handful of pomegranate seeds (for garnish)
